Italian dishes
Many Italian dishes vary by region.
In Northern Italy common ingredients include fish, potatoes, rice, maize, corn, sausages, pork and different types of cheeses.
In Central Italy ham, sausage, different sorts of salami, truffles, lasagna, tomatoes, and tortellini are important components to the local cuisine.
In the South of Italy, tomatoes, peppers, olives and olive oil, garlic, artichokes, oranges, ricotta cheese, aubergines, courgettes, anchovies, sardines, tuna, and capers are the most common ingredients.
