Steak recipes
Steak is a slice of meat cut perpendicular to the muscle fibres, what improves the tenderness of the meat. Steaks are typically served grilled, though they can be pan-fried. The most tender cuts from the loin and rib are cooked quickly, using dry heat, and served whole. Less tender cuts from the chuck or round are cooked with moist heat or are mechanically tenderized. Fish steak is a portion of cut perpendicular to the backbone (unlike fillet). Fish that are often cut into steaks include tuna, swordfish, salmon, halibut, turbot and some other. The larger fish make boneless steaks, but smaller fish make steaks with skin, meat and a section of backbone. Fish steaks are usually grilled, pan-fried or baked.
