The word oyster is used as a common name for a number of distinct groups of bivalve molluscs which live in marine or brackish habitats. The valves are highly calcified. Some kinds of oyster are commonly consumed by humans, cooked or raw. Other kinds, such as pearl oysters, are not. Often oysters are served raw on the half shell with a little mignonette sauce, which refers in French to “black pepper,” but you can also enjoy them in a variety of recipes, such as Oyster Stew or Oysters Rockefeller. Our healthy oyster recipes are lightened-up versions of these classic oyster dishes and are a good source of zinc, which supports the immune system.
