All kinds of meat are very high in protein, containing all of the essential amino acids, and in most cases meat dishes are a good source of zinc, phosphorus, iron, vitamins B6 and B12, riboflavin, and selenium. Meat can be broadly classified as "red" or "white" depending on the concentration of myoglobin in muscle fibre. Red meat dishes, such as dishes of beef, pork, and lamb, contain many essential nutrients necessary for healthy growth and development in children. Meat is prepared in many ways, as steaks, in stews, fondue, or as dried meat like beef jerky. It may be ground then formed into patties, loaves, or sausages, or used in loose form. Some meat is cured, by smoking, pickling, preserving in salt or brine. Other kinds of meat are marinated and barbecued, or simply boiled, roasted, or fried.
