Pear Chutney
Chutney (also transliterated chatney or chatni) is a family of condiments from South Indian cuisine that usually contain some mixture of spices, vegetables, and/or fruits. There are many varieties of chutney. This recipe for pear chutney calls for a spark of heat from cayenne pepper to balance the sweetness from golden raisins and brown sugar. The chutney makes a great sauce for egg rolls or an accompaniment to roast pork.
